Make smooth slurry: Mix bula flour with a small portion of the milk-water mixture until completely smooth.

Cook and fold: Cook the slurry in a heavy pot with some butter, stirring continuously as it thickens, then fold the dough-like mass repeatedly.

Hydrate in stages: Make a hole in the center, add more milk-water mixture and butter, cover briefly on low heat, then fold as the liquid is absorbed.

Repeat and finish: Repeat the central-well hydration/butter step, fold thoroughly, season and serve once smooth and cooked through.
